
This vegan yet fulfilling dish is not only satisfying but also hard to resist. Finger-licking palak paneer or saag paneer is easy to make yet comes out so beautiful and so tasteful. It is made with simple ingredients.
INGREDIENTS
- 2 kilo fresh SAAG /Palak/Spinach
- 500 gm of fresh methi leaves
- 1 tsp chili powder
- 1 tsp black pepper powder
- 2 tbsp ghee
- 1 tbsp ginger garlic paste
- 4 tbsp fresh cream
- 1 onion finely chopped
- 1 medium size tomato diced
- 200 gm paneer
- Salt to taste
- 1/2 cup milk
- 3 to 4 dried chili also known as degi mirch
Preparing saag for the recipe
Firstly we will assemble saag leaves in a bunch like a bouquet and then we will begin finely chopping it from the leaves side to the stem but we will leave 2 inches of stem from the end and discard. Same way we will cut methi leaves forming a bunch and discard the stem side from the end. Now we will add a strainer and wash them thoroughly. Let extra water drain. Now use a blender and add all the leaves in it. Add 1/2 cup milk from top and blend well in a fine paste.
METHOD
Now we begin our cooking process. We will take a pot and add ghee and then onions and fry them on the stove until brown. Now we will add ginger garlic paste and saute them. Now we will add tomatoes and cook them until tomato become soggy. Now we will add the spinach or saag purree to the pot and let it cook until the water from the saag dries and the saag starts to make thick bubbles and becomes concentrated. Now we will add all spices in and stir. In a separate pan, we will stir fry our paneer in a little oil until its edges become light brown now will get back to our saag add fresh cream to it and stir. Now we will add paneer and dried chili. Turn off the stove if the saag has released oil. Enjoy with naan, roti or even boiled rice.
