Ingredients

500 gms boneless chicken cut into thin long strips or cubes as you like

1 big onion chopped

4 garlic cloves, finely chopped

1 tbsp ginger paste

2 tbsp chilli flakes

Salt to taste

2 cups milk

50 g unsalted butter

1 cup cream

1 tbsp dried oregano

1 cup mushrooms

1 tsp black pepper

1 cup sweet corn

4 cups/ 400 gms dry fettuccine pasta

1 cup parmesan cheese/ or take 1 cup mozzarella cheese with a half cup of cheddar cheese.

Method

First, we will take a pot to boil our fettuccine pasta. Take 8 cups of water in a pot, add 2 tbsp of oil to it, 1 tbsp of salt, and let it boil on the stove. Once the water comes to a boil, add fettuccine pasta to it and boil for  12 -13 minutes.

Now strain the pasta in a strainer, add cold water on top to help the pasta not stick together. You can use normal tap water.

Now we begin making Alfredo sauce. We will take a fresh skillet and add butter to it, and let it melt on the stove. Now add chopped onion and sauté it. Now we will add the diced or striped chicken in the pan with garlic and ginger paste and saute it until the chicken changes colour. Now we will add 2 cups of milk to the pan and let the chicken cook for 15 minutes with the lid on. Now we will add mushroom slices and corn to it after removing the lid. Now add salt, black pepper, and chilli flakes. Now add 1 tbsp dried oregano. Now mix well and add cream and mix again. Now add parmesan cheese or a mixture of mozzarella and cheddar cheese if you don’t have parmesan at home. When the cheese is well melted in the sauce, we will add our pasta to it and mix well and turn off the stove. Now serve hot and enjoy the warm creamy pasta.
