Homemade Blueberry Pie – Fresh, Juicy & Delicious

Ingredients

For Crust

2 1/2 cups all-purpose flour

1 tsp salt

1/2 cup cold butter, diced

1/2 cup chilled water

Ingredients for Fillings

200 g fresh or frozen blueberries

1 cup granulated sugar

2 tbsp cornstarch

1 tbsp lemon juice

1/4 tsp salt

1/2 tsp ground cinnamon powder

METHOD

Preheat oven to 180 C/350 350°F


Take a bowl, add flour to it with butter, and salt and mix it well with your hands until it’s all crumbly. Now add chilled water and knead to form a smooth dough. Divide the dough into equal halves and keep in the refrigerator to chill for 30 minutes. Now, take a pizza pan and align it with one half of the dough flattened by a rolling pin. Shape it like a pie by pressing the sides against the pan. Now take another bowl and mix sugar, cornstarch, blueberries, cinnamon powder, and salt with cornstarch and mix and pour on the pie crust. Now roll the other half of the dough with a rolling pin and cover the top of the pie with it, with small slits made to help take the air out. Pop this in the oven for 50 minutes. Take it out and serve with tea or coffee.
