Ingredients

  • 4-5 medium-sized cucumbers, sliced or diced as you prefer
  • 1/2 tsp salt
  • 1/2 black pepper
  • 1 tbsp lemon juice
  • 1/2 chilli flakes (optional)
  • 1 onion, finely chopped
  • 1 cup plain yoghurt
  • 1/4 cup finely chopped dill
  • one crushed garlic clove
  • 1/2cup walnuts, finely chopped (optional)
  • 1/2 beet root or tomato , finely diced for vibrant colors (optional)

Method

Take a bowl and add finely chopped or diced cucumber to it. Don’t peel them, cut them with peel to impart color to the salad and for extra crunchiness. Now add one finely chopped onion with a crushed garlic clove to it with finely diced beetroot/tomato. Now add crushed walnuts and add lemon juice on top. Season with salt and pepper. Now, in a separate bowl, take the yogurt and whisk it well to help it become creamy and runny to avoid any lumps. Now pour the yoghurt on the salad and mix well. Garnish with chopped dill and mix well again.
