Budget-Friendly Korma Recipe

Sometimes we don’t have stock of everything in our fridge and the grocery is just running out the last thing you want to hear is a guest coming over. The time is so short that you need to prepare a meal that is not only budget-friendly but also made with fewer ingredients yet will impress your guests.

INGREDIENTS

  • 500 gm chicken with bones
  • 2 medium tomatoes puree/ take one if you don’t have 2
  • 1 onion finely diced
  • 2 tbsp ginger garlic paste
  • 2 green cardamom
  • 2 black pepper
  • 1 bay leaf
  • 1 cinnamon stick
  • 2 Lemon juice /2 tbsp white vinegar
  • Salt to taste
  • 1 tsp chili powder
  • 1 tsp Kashmiri chili powder/paprika powder to give red color to gravy
  • 1 tsp turmeric powder
  • 1 tsp cumin
  • 1 large potato diced optional

Cooking time:45 minutes

Method

We begin with finely diced onion in a large pot with 4 tablespoons of oil. Fry onions till golden brown. Now take them out on some plate. In the same oil add chicken with diced potatoes and all spices and lemon juice or white vinegar. Add whole spices too like bay leaf and all with the ground spices as mentioned in the ingredients. Now cook for 5 minutes. After 5 minutes add ginger garlic paste and cook for another 5 minutes. Now add water half cup and cover it with a lid and let it cook on low flame for 20 minutes. Open the lid and let extra water dry until oil appears from the side of the pot. Grind the fried onions to make them a fine paste with a little water add it to the chicken and mix. Now add tomato puree and cook for 7 minutes on medium flame. Now add 2 cups water and cook on a medium flame for 7 minutes. When the oil appears on the gravy the qorma is done. Serve with Naan or boiled rice. Adding potatoes will increase the quantity and will give a comforting flavor.

  • You can use potatoes to increase quantity if you have less chicken at home
  • You can use tomato puree instead of yoghurt
  • You can skip nuts in the gravy
  • You can marinate chicken with white vinegar or lemon juice instead of heavy yoghurt.
