Easy Baked Eggplant Parmesan – Authentic Italian Style

This delicious baked eggplant and parmesan recipe originates from Italian cuisine and is so indulging and satisfying that you want to make this every time. Egg parmesan recipe is so warm and satisfying to the taste buds that you cannot imagine the eggplant could taste so delicious.

Ingredients

  • 4 eggplants, fresh, cut into round or elongated slices according to their size and shape, about 1/4 inch thick
  • 3 large eggs beaten
  • Salt to taste
  • 1 cup mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 6 tbsp olive oil
  • 1 cup Marinara sauce
  • 1 tsp black pepper
  • 1 cup all-purpose flour
  • 1 cup bread crumbs
  • Fresh basil leaves for garnish

METHOD

First of all, we will take eggplant and make slits in the center and coat with salt on both sides and leave it to rest for 30 minutes so that it releases all water. Now we will put them on some paper towels to dry the excess water. Now we will coat them with flour and then dip in beaten eggs and coat with bread crumbs and fry them in olive oil in a pan on medium-low flame. Repeat this process with every slice of eggplant. Fry them for 5 minutes until each side turns light golden brown.

Now we will take them out on some paper towels to allow excess oil to drain. Now we will preheat the oven at 180 °C and take the oven tray and grease it. Now we will place our eggplants in a line on the tray and layer with marinara sauce, black pepper and mozzarella cheese. Now, top it off with Parmesan cheese and pop it in the oven for 20 minutes. We will not take them out until the cheese has melted and become golden brown. Garnish with fresh basil leaves. Now serve them in dinner or as an evening snack. At parties or gatherings, this dish will be the ever-loved.
