Ingredients
- 1 1/2 cup oats flour
- 1 leveled tsp baking soda
- 1 tbsp vanilla essence
- 1 pinch salt
- 1 tsp baking soda
- 2 eggs
- Half cup milk
- 5 tbsp butter
- 1 cup sugar
METHOD
Preheat oven 180 C/350F
Grease the muffin cups and place inside muffin tray

Now take a bowl and sift the oat flour in it now add sifted baking powder and sifted baking soda to it mix it well with some spoon and keep this dry mixture aside. In a separate bowl take 2 eggs at room temperature add 1 cup of sugar and beat until they become velvety. Now add butter, milk and vanilla essence and beat again to mix for 3 minutes. Now slowly add this mixture to the dry mixture and gently mix with some spatula. I prefer a silicone one. Now add the mixture in muffin cups placed in the muffin tray but make sure you fill each cup slightly more than a half .Now place the tray in the oven for 22 to 25 minutes.
Baking time 25 minutes

Use a toothpick to prick the center of the muffin if the toothpick comes out dry the muffin is done.
Vanilla icing for muffin
Ingredients
- 1 tsp vanilla essence
- 100-gram butter
- 4 tbsp icing sugar
- 4 tablespoon thick cream
Method
The butter should be stiff beat it with the hand beater until it becomes crumbly now add icing sugar vanilla essence and cream n beat for 5 minutes until it becomes smooth n fluffy. Keep it in refrigerator and wait for the muffin to arrive at room temperature so that u can put icing on top and it doesn’t melt . Enjoy them with tea or coffee.
