
If you are a vegan but want to enjoy a meat-free biryani or even if you are not a vegan you will simply fall in love with this veg dum biryani. And you will crave this more than a chicken or a mutton biryani. Let’s start making this indulging delicacy of bursting flavors.
Cooking time 45 minutes
Ingredients
2 tbsp ginger garlic paste
2 medium onions finely chopped
1 cauliflower cut into small florets
1 capsicum diced
2 medium-sized carrots diced into small cubes
1 cup green peas
3 green chilies
2 medium potatoes diced in small cubes
4 boiled eggs
3 cup rice
2 cloves
2 green cardamom
1 black cardamom
1 cinnamon stick
1 tsp jeera
1 tsp turmeric powder
Salt to taste
1 tbsp red chili powder
1 tbsp garam masala powder
1 bay leaf
1 cup yoghurt
3 medium tomatoes diced
1 tsp food color orange mixed in half a cup of milk
Method
First, we will soak our rice and keep them aside for 30 minutes. Now we will dice all the vegetables for biryani wash them and keep them aside in a strainer. Now we will take a pot and add 1/2 cup oil in it and light our stove. Now we will put onions in it and let them fry until golden brown. This process needs patience you don’t want to hurry and burn your onions so cook them on low flame. You guys can check out how to fry onions perfectly on my site. After the onions are perfectly done we will add 2 tbsp ginger and garlic paste and let it saute well with the onions. Now we will add diced potatoes with yogurt. The yogurt should be well blended. Now we will add turmeric powder , red chili powder, jeera , garam masala, cinnamon stick, green cardamom, cloves and black cardamom, salt and garam masala and cook for 5 minutes. Now we will add the rest of the vegetables in it add half cup a of water mix well cover it with a lid and let it sit on low flame for 15 minutes. Now we open the lid and add tomatoes green chilis cut into julienne style and let them cook. Make sure all the water dries and oil becomes visible from the sides of the pot. Now we will add 4 boiled eggs cut into small chunks to the vegetable masala.
Now time to prepare rice. We will take a pot add water to it 6 cups and let it boil. Add one tbsp salt in water with a bay leaf too. Now add rice to the boiling water by straining the excess water from them. Let the rice boil in the pot after 10 minutes take a spoon and check the rice grain by mashing it in between your fingers. It should have one grain left uncooked in the rice strand. You will feel the hard rice from one end. That’s when you are going to turn the gas off and strain the rice. We don’t overcook rice because they are meant to be cooked in dum or steam.
Now we begin layering by taking a fresh pot and first layer we add rice to the bottom then vegetable biryani masala on top then rice again and then biryani masala on top. Now add some mint leaves as a garnish or fried onions. After being done with the catering we will add food color and milk mixture and drizzle it all over the surface of our layers. Now we take a napkin-sized cotton cloth cover the lid of the pot from the inside and place it on the pot. Lit the stove on low flame. Let it steam for 20-15 minutes. Now take the lid off and fluff the rice gently by mixing later. Yummy mouth-watering biryani is ready.
