
Try this refreshing, vegan and low-calorie sushi. Perfect for summer snacks. Filled with a diversity of flavors. A burst of juicy watermelon on a bed of soft sushi rice wrapped in seaweed goodness and melting cream cheese in your mouth. Just a perfect treat to curb your hunger if you want something healthy, meanwhile yummy too.
Ingredients:-
Sushi rice ingredients
1 cup short-grain Japanese rice
1 cup water
1/2 cup rice vinegar
2 tbsp white sugar
1 tsp salt
Method
First, wash and soak the rice in water for 30 minutes. In a pan, pour water and let it boil. Now add rice after draining excess water and cook until there’s less than a half cup of water left. Now cover the rice and cook on a low flame under steam for 10 minutes. After 10 minutes, open the lid and turn off the stove. In a bowl, mix vinegar with salt and sugar until sugar dissolves. Now pour this over the cooked rice and fold gently to mix.

Ingredients for sushi
1 cup of sushi rice cooked
3 cups watermelon cut into cubes
1 sheet of nori seaweed wrap sheet
4 tbsp cream cheese
Mint or basil leaves for garnish
Method
Lay the nori seaweed sheet and pour rice on top. Flatten and spread rice on the sheet. Now add cream cheese and spread throughout. Now spread watermelon cubes all over the sheet. Now add mint leaves or basil leaves to the sheet. Fold the sheet using a bamboo mat. Now, form a sushi roll.

Cut the roll into small pieces of sushi. Enjoy the yummy goodness.
